Another favorite summer salad recipe!


Sometimes I’ll enjoy this salad, spinach and fig with strawberry vinegarette, into the Autumn months. You can even call this a super salad, since it is packed with superfoods. From the raw spinach, you’ll get vitamins A, B, C, and K, iron, and calcium. From the figs, you’ll get goodies like magnesium, calcium, and potassium. And of course, you’ll get more good stuff from the strawberries, olive oil, and other yummy ingredients.

Baby spinach
Green or black figs (I like using the black figs because it looks pretty in the salad)
Sliced strawberries (optional)
Sliced seedless grapes (optionals)

olive oil
balsamic vinegar (1:1 ratio oil:vinegar)
frozen or overripe strawberries
cracked pepper
fresh thyme
(herbs, salt, and pepper to taste)
I use my Magic Bullet for the salad dressing. You can use any blender. Then, store any extra in an old glass jar or bottle, that you can use as a shaker bottle. These dressings should last about one week in the refrigerator.

To this salad I like to vary other add-on ingredients, such as, burrata or gorgonzola (never both, and yes, I know they’re very different, but sometimes, I might be in the mood for mild, and other times, strong cheese), grilled chicken, homemade croutons (just a sprinkle). You can doctor this up to your own taste, and enjoy!
